Recipe: Gingered Carrots

Cook time: 20 minutes
Serving Size: 1/2 cup
Yield: 5 servings
Nutrition Facts (per serving): Calories 50; Total Fat: 1 gram; Sodium: 47 mg; Carbohydrate: 7 grams; Fiber: 3 grams; Protein: 0 grams

Ingredients:

  • 1 lb carrots, cut into ¼ inch slices(21/2 to 3 cups)
  • 1 tablespoon light butter
  • 1 teaspoon spoonable sugar substitute
  • ¼ teaspoon ginger
  • 2 Tablespoons finely chopped fresh parsley or
  • 2 teaspoon dried parsley

Directions:

1. Place carrots in a large saucepan. Add just enough water to cover.

2. Bring to a boil over high heat; reduce heat and simmer, covered, for 10 to 12 minutes or until barely tender.

3. Drain well. In a small bowl, stir together light butter, sugar substitute and ginger; gently into carrots. Sprinkle with parsley.
