Ingredients:
- 1 lb carrots, cut into ¼ inch slices(21/2 to 3 cups)
- 1 tablespoon light butter
- 1 teaspoon spoonable sugar substitute
- ¼ teaspoon ginger
- 2 Tablespoons finely chopped fresh parsley or
- 2 teaspoon dried parsley
Directions:
1. Place carrots in a large saucepan. Add just enough water to cover.
2. Bring to a boil over high heat; reduce heat and simmer, covered, for 10 to 12 minutes or until barely tender.
3. Drain well. In a small bowl, stir together light butter, sugar substitute and ginger; gently into carrots. Sprinkle with parsley.
